1. ServSafe® Food Protection Manager Certification
Class and Exam

The California Food Safety Law requires any food service establishment in California to have at least one employee that has a valid Food Protection Manager Certification. The National Restaurant Association provides a nationally recognized program that is accredited by the American National Standards Institute (ANSI) based on criteria by the Conference on Food Protection (CFP). This program is called the ServSafe® Food Protection Manager Certification program and meets California's Food Safety Law requirement.
This comprehensive course covers all the subjects required by California's Law and the National Restaurant Association. This knowledge¬† prepares the participants¬† to take the test for the National Restaurant Association's ServSafe® Food Protection Manager Certification. The class and exam can be in a classroom setting or online. The Exam must be taken in the presence of a Registered ServSafe Proctor. The passing grade is 75%.
This Institute also recommends this course as part of any prerequisite step in developing a HACCP plan along the food supply chain.

COURSE CONTENT
2. ServSafe Alcohol® Advanced Proctored Certification Class and Exam
The sale, service and consumption of alcohol in an irresponsible manner costs the nation annually many lives, billions of dollars, loss of businesses, imprisonment and injuries, among other damages. To educate sellers, servers and consumers about responsible sale, service and consumption of alcohol, the National Restaurant Association has created the ServSafe Alcohol Advanced Proctored training and certification program. This program is approved by the California Department of Alcoholic Beverage Control (ABC).
The course covers alcohol law and your responsibility, how to recognize and prevent intoxication, how to check identification and how to handle difficult situations. The course can be taken online or in a classroom setting, and the exam must be taken in the presence of a Certified ServSafe Alcohol instructor. The exam could be online or with paper and pencil. The receipt of a Certificate is the confirmation of the mastery of the critical knowledge needed to sell and serve alcohol responsibly. This course is also an excellent starting point for managers of food service and retail industries who would like to take SURE™ HACCP Alcohol.
3. ServSafe Alcohol® Primary Certification Class and Exam

The sale, service and consumption of alcohol in an irresponsible manner costs the nation annually many lives, billions of dollars, loss of businesses, imprisonment and injuries, among other damages. To educate sellers, servers and consumers about responsible sale, service and consumption of alcohol, the National Restaurant Association has created the ServSafe Alcohol Primary training and certification program, which is less rigorous than the Advanced course. This program is approved by the California Department of Alcoholic Beverage Control (ABC).
The course covers alcohol law and your responsibility, how to recognize and prevent intoxication, how to check identification and how to handle difficult situations. The course can be taken online or in a classroom setting. The exam could be online or with paper and pencil. The receipt of a Certificate is the confirmation of the basic knowledge needed to sell and serve alcohol responsibly. This course is also an excellent starting point for employees of food service and retail industries who would like to take SURE™ HACCP Alcohol.

4. ServSafe® California Food Handler Certification Class and Exam
As the last line of defense in food protection, food handlers play a crucial role in providing food safety along the food supply chain. The ServSafe® California Food Handler Training and Certification program was created by the National Restaurant Association to educate food handlers in order to meet that responsibility.
The course covers the fundamentals of food safety, allergens, food defense, time and temperature abuse, cross contamination, personal hygiene and cleaning and sanitizing. This program meets the requirements of California Food Safety Law (SB 602) and can be taken online or in a classroom setting. There are 40 questions on the exam. This course is also an excellent course to prepare those employees in food service and retail industries who would like to take the SURE™ HACCP Food Safety for Employee's course.
5. ServSafe® Allergens Online Course and Exam
Millions of Americans are allergic to different kinds of foods and some allergens can be fatal. The National Restaurant Association has developed ServSafe Allergens Online Course to educate the "front of the house" and "back of the house" employees of the food service industry about allergens. We in this Institute recommend the course to all who are involved in food safety from farm to table. This course should be included in any HACCP prerequisite program.
